Jamaican Goat Curry
Method
Heat the vegetable oil in a large lidded frying pan
Add the meat and brown all over to seal, then add the onions and
fry until golden brown
Add the thyme, garlic, spring onions, scotch bonnet, curry powder,
tomato ketchup, ginger, salt and pepper and enough water to cover.
Simmer with the lid on until tender, about 70-90 minutes
Next, add the carrots and potato to the pan and simmer for another
10 minutes or until vegetables and meat are tender
Season to taste and serve with rice and peas.

1 kg Westcott diced goat meat
2 tbsp vegetable oil
2 large chopped onions
2-3 sprigs thyme
2 cloves garlic finely chopped
2 spring onions chopped
1 scotch bonnet whole
2 tsp curry powder
1 tbsp tomato ketchup
1 tbsp finely chopped ginger
2 large carrots diced
1 large potato diced
salt and pepper
rice and peas to serve
